Jalapeno Cheddar Scones

Ingredients

  • 1 stick / 125g of butter
  • 2.5 cups of all purpose flour
  • 1 tablespoon of baking powder
  • 1 teaspoon of salt
  • 1 chopped jalapeno pepper
  • 4 ounces/125g of diced sharp cheddar
  • 2 eggs
  • Half a cup of milk

Directions

  1. Place the stick of butter in the freezer before starting.
  2. Preheat the oven to 400F/200c and grease a baking sheet with butter (not the one in the freezer).
  3. Mix the flour, baking powder and salt in a bowl.
  4. Take the frozen butter and grate it into the flour mixture. If you don’t have a grater, cut the butter into cubes and mush them into the mixture with a fork.
  5. Toss the chopped jalapenos, cheese, eggs and milk into the bowl and mix them with your hands until the dough comes together.
  6. Sprinkle flour on the countertop and roll or shape the dough with your hands to around an inch and a half thick and cut them into triangles.
  7. Place the dough pieces onto the baking sheet and bake for 25m

Notes

  • Brush the scones with egg wash before baking for a better color.
  • You can sprinkle salt & pepper onto the dough right before baking for more flavor.
  • If you don’t have a rolling pin, a vodka bottle or a wine bottle will do nicely.
