Hash Browns

Ingredients

  • 2 large potatoes
  • 2 tablespoons of canola oil
  • 2 tablespoons butter
  • Salt and pepper

Directions

  1. Scrub the potatoes then coarsely grate them. Squeeze the grated potatoes to remove its water content.
  2. Heat a large frying pan, preferably nonstick, over medium–high heat. Add the oil and butter.
  3. When hot, add the potatoes and push down with a spatula to spread evenly in the bottom of the pan. sprinkle the top with salt and pepper. cook until the bottom is browned and crispy (roughly 10 minutes). Do not flip until it is browned.
  4. Flip the hash brown, cut into sections if necessary, and cook until browned and crispy on the other side.
  5. Slide onto a pan and serve.

Notes

  • Patting the grated potatoes with kitchen towels helps remove more moisture
  • You can reheat in the microwave or the oven at 400F/200c for 5 minutes
