Slow Roasted Tomatoes

Ingredients

  • 8 roma or tomatoes on the vine
  • 3 tablespoons of olive oil
  • 2 tablespoons of salt flakes
  • 1 tablespoon of ground black pepper

Directions

  1. Preheat your oven to 230F/110c
  2. Slice the tomatoes in half and place on a parchment lined baking tray cut side up
  3. Drizzle olive oil over the tomatoes and sprinkle salt & pepper
  4. Leave to roast in the oven for 3 hours
  5. Remove, cool and serve or refrigerate for up to 5 days

Notes

  • For added fragrance, add finely chopped shallots or onions to the tray
