- 8 roma or tomatoes on the vine
- 3 tablespoons of olive oil
- 2 tablespoons of salt flakes
- 1 tablespoon of ground black pepper
Directions
- Preheat your oven to 230F/110c
- Slice the tomatoes in half and place on a parchment lined baking tray cut side up
- Drizzle olive oil over the tomatoes and sprinkle salt & pepper
- Leave to roast in the oven for 3 hours
- Remove, cool and serve or refrigerate for up to 5 days
Notes
- For added fragrance, add finely chopped shallots or onions to the tray
