Mix the flour, sugar, baking powder, baking soda and salt in a bowl with a spoon.
In a second bowl, mash 2 bananas and add milk, eggs and vanilla together then mix them as smooth as you can.
Pour the dry ingredients from the first bowl to the second and combine them gently. Overmixing ruins the texture.
Let the mixture sit for 10 minutes and slice 2 bananas for later.
Heat a pan or skillet over medium heat, melt some butter and ladle in the pancake batter to your desired size.
Once the batter is in, place some banana slices on top of the uncooked batter. Flip when bubbles start to form on the batter. The second side should take no more than 1 minute.
Stack the pancakes and serve with a slice of butter and some syrup on top.
