1/4 cup (60 mL) unsalted butter, at room temperature
2 large eggs
1 teaspoon (5 mL) vanilla extract
1 cup (240 mL) mashed ripe bananas (about 2 medium)
Directions
Preheat the oven to 350°F (180°C). Grease a loaf pan with butter.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In a separate large bowl, mix the sugar and butter together until mostly smooth. Beat in the eggs, one at a time, then stir in the vanilla and mash the bananas in.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Pour the batter into the prepared loaf pan and bake for 55-60 minutes, or until you can stick a toothpick in the middle without any batter sticking.
Let the bread cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely before slicing and serving.
Notes
Cooking spray can be used instead of butter to grease the pan
Overripe bananas are better for this
Wait for the banana bread to cool down before slicing to avoid cracking.
